When I do:
emitter.rotation = 45;
I have no idea around what point is that emitter rotating, I thought that it was around the origin of the particles, but that does not seem to be the case. I wanna make like a rocket fire but when I try to rotate the emitter I get weird results. Any ideas?. -

The same if I rotate the renderer, I don't understand around what is it rotating. -

To answer myself, the rotation was weird because I didn't assign a position to the renderer, so it was rotating at a default 0, 0 after assigning a starting position to the renderer this issue was resolved. Thanks myself. -

Sorry I wasn't around to help. I'm glad you got it sorted.
When you rotate the renderer, you rotate the entire image. The renderer is just a Sprite so its rotation behaves just like any other Sprite.
When you rotate the emitter, you rotate just the emitter but don't affect any existing particles or other emitters.
