I would like to stop an emitter but let the current particles on the screen Age and Fade over their Lifetime rather than instantly dying. Anyone know how I can do that?

Change the counter of the emitter to a ZeroCounter.
emitter.counter = new ZeroCounter();
This will stop the emitter from creating any more particles.
